V’s Diner will be bringing a new twist on the traditional idea of an American diner. This partnership of three vegan restaurateurs is focused on mastering the art of creating and serving delicious vegan dishes.

Co-owner Mackenzie Singleton will be working alongside Jarett Dolan and Michael Della Pia to establish the diner at 908 State Road 436. According to leasing data, they have very recently signed the contract for the building. Singleton shared that they are in the process of permitting, and construction will soon start. If all goes smoothly, they hope to open the doors April 1st, but that is subject to change.

After the success of their pop-up locations and food truck, the group found they needed a bigger space in order to keep up with demand. Their vegan dishes have grown to be quite popular. The success can be attributed in part to their thoughtful dedication to crafting their vegan meats from scratch.

In a phone interview with What Now on Tuesday, Singleton shared: “I feel too often that vegan meats are treated like sides, not given the respect or attention to detail that really creates a dish that’s memorable.”

Look out for their imminent April opening for their hand-crafted vegan comfort foods, like burgers, gyros and cheese stakes, according to the Orlando Sentinel.
