VAI, the sprawling billion-dollar luxury resort currently under construction at 9505 Cardinals Way in Glendale, will ultimately house a total of 12 restaurants, “seven of which will be operated by VAI,” while the other five will belong to outside parties including “celebrity chefs and other concepts that would be new to the Phoenix market,” according to recent reporting in AZ Central.

A representative of VAI did not immediately return a request for comment.

The resort was initially supposed to open this fall, however, its launch date has since been pushed back to late 2023. As such, details about the restaurants remain scant, with Grant Fisher, president of VAI Global Development telling AZ Central that the company is “still in negotiations for those spaces.”

Aside from the 12 restaurants, there will be another 10 bars and lounges.

To say that VAI Resort is an ambitious project would be an understatement. The grounds will supposedly have a whopping 1,200 hotel rooms and suites – 160 of which will have balconies boasting views of the on-site 8,000-capacity concert venue – as well as the possibility of an additional residential area for timeshares or condominiums. Moreover, there will be another two hotels, one of which is branded as “family-friendly” and the other “high-end.”

Lastly, rest, relaxation, and recreation can be either be found at the 6-acre swimming lagoon with requisite island “which will feature temperature-controlled white sand beaches that can be used year-round,” or at the Mattel Adventure Park featuring branded attractions from the iconic toy maker including a Hot Wheels roller coaster, Thomas the Tank Engine theme park, Barbie beach house, Masters of the Universe laser tag, UNO cards climbing structure, Rock ‘Em Sock ‘Em Robots mini-golf, and more.
