New Mexican Restaurant Coming to Grass Clippings at Rolling Hills

Phase 1 of renovation is underway and is expected to be completed by next spring

A brand new, yet-to-be-named Mexican restaurant is getting ready to open later this year in Tempe at 1415 N. Mill Ave.

Arizona’s only fully lighted 18-hole, day/night golf course and practice facility in Papago Park has been undergoing significant renovations, putting on the final touch last December. The upgrades will continue throughout 2024, with the owners planning to eventually add a live music venue, an activity lawn, a new Mexican restaurant, and a patio bar later this year, possibly early next. The company’s website states that Phase 1 of renovation is underway, and they expect to show off new amenities in Fall 2024 and Spring 2025.

Located five minutes from Arizona State University, downtown Phoenix, and Old Town Scottsdale, Grass Clippings Rolling Hills is quickly becoming one of Phoenix’s premier golf destinations. The 93-acre golf course features an 18-hole executive golf course and an 18-hole par three golf course at night. While it’s gaining recognition as being Arizona’s first fully lit 18-hole golf course, the upcoming amenities will make it even more desirable. Additional details regarding the new Mexican restaurant have yet to be revealed.

“Grass Clippings Rolling Hills sits in the heart of Phoenix Metro,” according to the company’s website. “In 1960, Milton Coggins and company designed the front nine. Twenty-seven years later, in 1987, Gary Panks, an Arizona native, designed the back nine. The course remains 1 of 3 public golf courses in Tempe. Its importance cannot be overstated. Grass Clippings Rolling Hills is being built to host large golf tournaments day and night. Our renovated clubhouse, outdoor bar, event lawn, and concert venue will allow for unique golf-centric and non-golf-centric events.”
