According to a recent article from Everout, ChefStable’s Bluto’s will expand with a second location at Beaverton’s Cedar Hills Crossing.
“Bluto’s new location will open at the end of 2025. The new location will be in the middle of the huge development at Cedar Hills Crossing,” owner of ChefStable, Kurt Huffman, told What Now Portland.
“Our intent with Bluto’s aligns with the concepts’ signature elements: woodfire grill, white tile, blue colors, and a few custom wallpapers. We have a great deal, more creative license, and we are figuring out what the rest of it looks like since we’re designing it from scratch.”
“The original location on Belmont was a finished restaurant that was never able to open. We made small changes to the restaurant to make it look like what we wanted, but we inherited a lot of materials in the space, and we may want to train with our next one.”
“Both concepts (Grassa and Bluto’s) are in partnership with Rick Gencarelli, the chef, and my two longest-tenure employees of ChefStable: Jessica Silverman and Nick Schuurman. Nick is a partner in Lardo, Grassa, and Bluto’s. Jessica is a partner in Grassa.”
ChefStable’s website adds more about Bluto’s: “The idea for Bluto’s stemmed from Chef Rick Gencarelli’s love of cooking over a wood fire, combined with Kurt Huffman’s wife’s Greek roots. Rick and Kurt iterated on flatbread recipes and variations of meat on sticks for years at staff parties and gatherings before they finally decided it was time to take the leap.”
“Bluto’s, named after the legendary John “Bluto” Blutarsky, is wood-fired and Greek-inspired, but definitely not traditional. Hummus can be served classic or topped with rotating goodies like spiced beef, spring veg, or pork belly.”
“A twist on an iceberg wedge salad is topped with ranchziki and pita chips. And don’t forget the flatbread… you might start with one, but you will inevitably find yourself back in line to order another.”
