Colectivo Brings Traditional Mexican Cuisine to Johns Island

New Mexican restaurant Colectivo seeks to bring a traditional family-style experience to the lowcountry.

A new Mexican dining concept will open its doors next week on Johns Island.

Colectivo, located at 2901 Maybank Highway, has set an opening date of September 6. The dining room’s hours will be Wednesday-Saturday, 4-9 p.m., with a pop-up from Asian-cuisine concept Gingerbug on Mondays at the same hours.

The Colectivo website announces their offerings as “traditional Mexican made to be shared.” An online menu shows a range of authentic and unique Mexican fare, from various ceviches to braised beef belly (Suadero) and Valladolid-style sausage (Longaniza). They also plan to offer beer, wine and creative cocktails featuring flavors from south of the border.

Colectivo is being brought forth by owner Chad Dennis, former sous chef at Ted’s Butcherblock and partner in the Gingerbug pop-up since 2019. He partnered with Alex Yellan as executive chef to build the Colectivo menu. Yellan worked in Portland and New York before arriving in Charleston to lead kitchens at Minero, Tu, Tippling House and The Press.
