New Mexican Restaurant to Open in Denver’s Bonnie Brae Neighborhood

Ni Tuyo will offer handcrafted tacos, margaritas, and molcajetes.

From the chef behind Adelitas Cocina Y Cantina and La Doña Mezcaleria in Denver comes a new concept—Ni Tuyo. Ni Tuyo owner and Chief Operations Officer Nathan Ayala-Schmit is the son-in-law of Chef Silvia Andaya. Andaya has developed delicious fare for Adelitas and La Doña over the years and will now focus on a smaller menu at Ni Tuyo.

“This new spot, Ni Tuyo, is an opportunity for her to expand her culinary offerings but still present generational Mexican,” Ayala-Schmit told What Now Denver. “A lot of these recipes that are used at Adelitas and La Doña are generations-old, sometimes two or three hundred years.”

Ni Tuyo will feature tacos, margaritas, eclectic appetizers, and five or six different molcajetes. Molcajete is a traditional dish like a stew shared by the table.

“The other thing that we’re excited about is that we’re going to be doing some Mexican charcuterie. So, we’re bringing in Mexican meats and cheeses,” Ayala-Schmit explained. “Charcuterie in Mexico is phenomenal in its variety, and we want to bring that to Denver.”

Ni Tuyo will feature 25 to 30 mezcals and 20 to 25 tequilas. “So, it’s going to be a little bit smaller of a list, a little bit more thoughtful,” he said.

Ni Tuyo will be located in Denver’s Bonnie Brae neighborhood at 730 S. University Blvd. “It’s this dream location,” Ayala-Schmit said. “This is such a landmark neighborhood for Denver that it’s a great combination for us.”

They had to renovate the space from a more industrial-modern look to a traditional, generational Mexican ambiance. Ni Tuyo is tentatively scheduled to open sometime in mid-June.
