El Chingon Mexican Bistro will open at the Denver Airport (Concourse B, Food and Beverage Marketplace) at 8500 Peña Blvd, Denver, CO 80249 sometime next year, according to 9 news.

In 2012, the beloved bistro closed the doors of its Arvada strip mall location. It would be 18 long months before El Chingon (Spanish slang for “badass”) would once again serve hungry customers  – this time from a small space located at 4326 Tennyson St., formerly My Sweet Bakery, and before that, a regular residential home.

“We had to go through a lot of hurdles with the city,” David Lopez – Nuñez’s nephew and the executive chef at El Chingon – told Westwood. “Transitioning an old house into a full-service restaurant isn’t easy.”

Unfortunately, that location eventually met its end as well. Today, however, the family-operated business and its team are excited to expand into the Denver International Airport where its fare can be shared with patrons from all places. A clip shared on Nuñez’s Instagram shows a sneak peek of the restaurant’s area and installation.

El Chingon’s menu consists of mouthwatering selections like cilantro lime salads, Chile Rellenos, and made-fresh-daily ceviches. It’s unknown if the airport menu will be altered or truncated.

What Now Denver reached out to Nuñez and Lopez for comment, but did not immediately receive feedback.
