Construction Underway on Castle Rock Los Dos Potrillos

The Mexican chain has a new spot in the works.

The family-owned chain of Los Dos Portillos restaurants has another iteration pending. Construction is happening at the site of Los Dos Potrillos Cerveceria II in Castle Rock, at 6372 Promenade Pkwy.

Posts online from the company show that walls went up at the property last week. It has been reported that this is Ramirez Hospital Group’s largest project to date — a 7,000-square-foot building with an additional patio space outside. It will house a full-service eatery and brewery.

The restaurant group started in 2002 and has since expanded to five locations currently open: Centennial, Parker, Northglenn, Highlands Ranch, and Littleton. There are different variations: some have a fast-casual style, some are restaurant-focused and others, like the new one coming to Castle Rock, have a cerveceria onsite. 

Located in a busy shopping center, the business is sure to receive plenty of attention. The site is right across from The Outlets at Castle Rock, which is home to many popular retailers like Nike, Coach, North Face, and more.
