A commercial construction permit was applied for on August 30 and is listed as “in progress”. The company is seeking permission to install three illuminated wall signs, and is working with OZ Architecture, records show.
The concept of SkinnyFATS is balance: the menu is split between a “healthy side” and a “happy side”. Its offerings consist of tacos, chicken tenders, sandwiches, bowls, burgers, and more.
This location is owned by Elevated Inc., a franchise group that signed a ten-unit deal with SkinnyFATS to bring the brand to Colorado. There is also a downtown Denver store and a Boulder store in the works from the company.
