Chef Behind Blackbelly, Santo Creating Third Concept

Panza Negra is Hosea Rosenberg’s next venture.

Top Chef winner Hosea Rosenberg, who runs successful Boulder eateries Blackbelly Market and Santo, is on to his next concept. Panza Negra is a new restaurant he is planning to open at 3000 Pearl Pkwy, according to Biz West

Boulder’s Planning Board reviewed the concept’s ideas a few weeks ago. The property is a 2,446-square-foot shell with 962 square feet of patio space at The Reve, a new mixed-use building. 

Panza Negra “will serve Spanish tapas with fast-casual service in the morning and lunch, and full service in the evening,” documents state. The business’ proposal includes adding a patio cover and a pick-up window on the 30th Street-facing wall.

The restaurant will have an occupancy limit of 71 patrons inside and 66 outside, and be open from 7 a.m. to midnight. Panza Negra means “black belly” in Spanish.
