Top Chef winner Hosea Rosenberg, who runs successful Boulder eateries Blackbelly Market and Santo, is on to his next concept. Panza Negra is a new restaurant he is planning to open at 3000 Pearl Pkwy, according to Biz West.
Boulder’s Planning Board reviewed the concept’s ideas a few weeks ago. The property is a 2,446-square-foot shell with 962 square feet of patio space at The Reve, a new mixed-use building.
Panza Negra “will serve Spanish tapas with fast-casual service in the morning and lunch, and full service in the evening,” documents state. The business’ proposal includes adding a patio cover and a pick-up window on the 30th Street-facing wall.
The restaurant will have an occupancy limit of 71 patrons inside and 66 outside, and be open from 7 a.m. to midnight. Panza Negra means “black belly” in Spanish.
