Illegal Pete’s Revamping Its DU Location

City records show that Illegal Pete’s is doing construction work on its University of Denver outpost, next to the campus at 1744 E Evans Ave. The business is expanding the eatery by 455 square feet and making other improvements, records state. 

A commercial construction permit was filed for on December 1 and is listed as “in progress”. Documents state that the valuation of the work being done at the site id $805,000. The design company listed on project records is Maliakai Architectural Design, which is also working with Illegal Pete’s on several other projects.

The company is doing revamping at a few different properties, news reports show. In addition to the Evans location, Illegal Pete’s is redoing its Pearl St. store in Boulder and on a new office headquarters site in Sloan’s Lake.

Illegal Pete’s is known for its fast-casual “Mission Style” burritos, and there are reportedly up to 90 million burrito combinations available at the chain. It was founded in 1995 by a CU graduate in Boulder, and has grown to 12 locations in two states.
