Green Valley Ranch Eyed for Inaugural CO Portillo’s

Famed Chicago chain Portillo’s has submitted plans for its first Colorado location, Westwood reported recently. The brand, which announced last year that it would be entering the state soon, is looking at a parcel at the intersection of 57th Avenue and Tower Road.

The Green Valley Ranch property is near the Denver International Airport. Portillo’s is seeking permission to build a 6,250-square-foot restaurant on the lot, which is a vacant site near Sprouts. Plans include a two-lane drive-thru, a 500-square-foot patio, and 98 parking spots.

It is to be part of a larger development project called Link 56 by Illinois-based Kensington Development. The 150-acre mixed-use center is in the predevelopment phase and will feature 30 acres of commercial space, 2,000 apartments, and designated open space. 

Portillo’s is revered for its Italian beef Chicago-style hot dogs, and has a cult following that spans across the nation. The news of its pending arrival in Colorado has left locals eagerly anticipating its addition to the QSR scene here.
