Café Mexicali Secures Second Johnstown Store

Café Mexicali is set to open its second Johnstown location at 4395 Ledge Rock Drive, Unit 190, according to Mile High CRE. This is the latest step towards expansion for the local brand, which is a growing franchise that currently has five stores.

The restaurant will occupy 3,640 square feet of space in the Ledge Rock Center, a 350-acre mixed-use development at the intersection of State Highway 60 and Interstate 25. When complete, the restaurant will accommodate 80 to 90 seats, according to franchisee Xiomy Flores. 

Flores told What Now Denver that a lease for the property was signed in September, and permitting is underway. She said the hope is to start construction in April and ideally open in July or August, and the expectation is to hire around 40 staff members. 

“What really motivates me is having a job for people,” explained Flores, who owns a contracting company and an accounting firm. “A restaurant will be so nice; I can hire a bunch of people and offer flexible jobs.”

Known for its fresh, made-from-scratch Mexican cuisine, Café Mexicali offers a customizable menu that allows customers to personalize their meals with a choice of meats, beans, rice, and toppings. Popular items include burritos, quesadillas, tacos, nachos, and salads, its website shows.
