Fia Restaurant Opening Third Adjacent Spanish Eatery Called Dono

The new faster-paced restaurant will have authentic tapas from Spain

Fia Restaurant is expanding to a third restaurant called Dono adjacent to the original location in Santa Monica, located at 2460 Wilshire Blvd.

The new Fia restaurant will move into the former home of Gramercy, Taco Teca, and The Charleston in early Spring 2022. Director of Operations Rick Lang tells What Now Los Angeles that the new restaurant will open in about 60 days and feature a large patio for brunch on the weekend. He says this faster-paced restaurant will have authentic tapas from Spain under former Mélisse chef de cuisine Branden Collins. The name Dono is short for Donostia-San Sebastián, a city in the Basque Autonomous Community of Spain.

Fia first opened in August 2019 under owner Michael Greco with the help of barman Vincenzo Marianella and Tara John overseeing the wine and General Manager Jimmy Ornelas overseeing the floor. The store’s success led to the adjacent opening of Fia Steak in late October 2021, with a Carrera marble bar and an outdoor patio. Much like the first two Fia restaurants, the new Spanish branch will also feature a beautiful patio.

Not much else is known about the new upcoming Spanish restaurant, but it’s clear the Fia Restaurant Group is creating quite an imprint across from Douglass Park. When the new restaurant opens, Wilshire Boulevard will feature Fia, FIa Steak, and Dono all in one area. The restaurant becomes one of the many Iberian restaurants coming to Los Angeles, such as Bazaar Meat and Bar Moruno.
