SAIJO Hand Rolls and Kushiyaki, a brand new concept from the creators of JINYA Ramen Bar, is getting ready to debut in Los Angeles at 12473 Washington Blvd.
This new restaurant will move into the former home of The Detour Bistro Bar, according to a recent liquor license application. Tomonori Takahashi, president of JINYA Holdings Inc., plans to open this SAIJO Hand Rolls and Kushiyaki sometime in 2025, along with another location in Vancouver, also expected to open sometime next year. It’s unclear exactly when these two locations are expected to open, but it will likely be in the year’s first half.
This is a massive accomplishment for JINTA Holdings Inc., which owns LBD Japanese Bar & Lounge, Robata JINYA, Bushi by JINYA, and more. While each concept is unique in its own way, SAIJO Hand Rolls and Kushiyaki are the most intimate, where a few guests can view a culinary journey right in front of them through an open kitchen. When this new concept opens, customers can expect plenty of sushi, hand roll options, and Kushiyaki, a popular dish of skewered and grilled meat, vegetables, or seafood.
“In the rich cultural landscape of Japan, castles were the historic homes of the country’s legendary Samurai warriors and enigmatic Geishas,” according to the company’s website. “Among these iconic structures, a smaller castle, known as a “JINYA,” held its own unique significance. It’s this legacy that inspired the founding of the original Robata JINYA restaurant, which opened in the Ebisu district of Tokyo in 2000. One JINYA, now serves as the site to the High School in Saijo City where the founder himself once attended and inspired the creation of SAIJO Hand Rolls and Kushiyaki, that pays homage to the storied past of the JINYA and the authentic craftsmanship of traditional Japanese cuisine.”
