Mandy’s Gourmet Salads, a chain eatery serving gourmet salads, grain bowls, smoothies, desserts, and more, is preparing to open a new location in Brossard.

The company is intensifying its expansion efforts across Canada, planning to open 30 to 40 locations nationwide over the next five years, according to Retail Insider. Based in Montreal, the brand is focusing on key urban markets, such as Vancouver and Calgary, to extend its reach beyond Quebec and Ontario. Vanessa Fracheboud, President of Mandy’s Gourmet Salads, confirmed that the company is actively searching for its first location in Vancouver while finalizing new restaurant openings in Toronto and Ottawa. Currently, the company operates 15 locations in Quebec and Ontario.

Mandy’s Gourmet Salads is set to start the expansion with a new location on the South Shore of Montreal, near Quartier DIX30, expected to open in April 2025. Following this, the company will focus on expanding beyond Quebec, with a new location in Ottawa scheduled for June and another at Yonge-Eglinton planned for July. Additionally, a location in the Canary District is anticipated to open in Spring 2026. With growth in Ontario and Quebec underway, Mandy’s is now looking westward. Potential locations in Vancouver include downtown, East Vancouver, Kitsilano, and North Vancouver, while in Calgary, the focus is on the downtown area. As the company expands throughout Canada, the ownership team remains committed to its core values and identity.

“We have refused a few great locations because the building itself was not 100% aligned with who we are,” Fracheboud tells Retail Insider. “The stretch goal is 40 locations, but we won’t compromise on our brand identity. Approximately 10% of our food purchases come from the U.S., but we are bringing most of it back to Canada. We are all in this together, and we have to do what’s right for our country. 99.5% of our kitchen equipment is from Canada. Even for decor items like ceramics, we are now being more diligent about sourcing locally.”

Mandy’s Gourmet Salads is focusing on its expansion plans, but that is not the only aspect of the company. In addition to expanding its restaurant locations, Mandy’s is broadening its product lines. The company’s salad dressings are available in over 1,000 grocery stores across Canada, and a new grocery product is developing. Furthermore, Mandy’s is piloting automation to enhance efficiency with a new robot named Remy, which will help streamline the salad assembly process. Those interested in recreating Mandy’s salads at home can order the book *Mandy’s Gourmet Salads*, where Mandy Wolfe, Meredith Erickson, and Rebecca Wolfe guide readers on how to prepare their famous salads.
