At the intersection of State Road 56 and Lajuana Road, a new outpost of Illinois-based restaurant and winery chain Cooper’s Hawk Winery & Restaurants appears to be in the works. A plan review was filed for a Cooper’s Hawk at 28963 State Road 56 in Wesley Chapel.

The Cooper’s Hawk dinner menu opens with appetizers like Thai Lettuce Wraps, Chicken Potstickers, and Classic Tomato Bruschetta. Pasta & Risotto dishes include Country Rigatoni (Italian Sausage, Mushroom, Chicken, Roasted Grape Tomatoes, Herbs, Tomato Garlic Cream Sauce) and Braised Short Rib Risotto. A Burgers & Sandwiches menu features the Leonard Burger (A Tribute to Founder Tim McEnery’s Father—Double Patty, Signature Sauce, Caramelized Onion, American Cheese, Lettuce Tomato) and a Crispy Buttermilk Chicken Sandwich.

The menu also features a generous selection of wines by the bottle and by the glass, plus speciality cocktails like the Kentucky Mule, with Knob Creek, lime, ginger beer, mint, and candied ginger.

The State Road 56 location is situated just across Lajuana Road from Wesley Chapel’s Audi dealership, not far south of Fairfield Inn & Suites by Marriott.
