A growing chain is preparing to bring a fresh and unique spin on fast-casual cuisine to the Virginia restaurant scene. Spitz Mediterranean Street Food is preparing to open its latest restaurant in Leesburg later this year, reports local media outlet The Burn.

Spitz will be opening at 1610 Village Market Boulevard, #100, this winter. What Now DC caught up with Leesburg franchisee Meet Patel and Spitz founder Bryce Rademan to discuss the particulars of the brand’s newest home.

Leesburg native Patel explains that Spitz will fill a dining void in his hometown. He states “I’m from here, I grew up in Leesburg. It’s a historic town known for food and shopping spots but it is missing that modern Mediterranean food that Spitz offers.”

Rademan, who began Spitz in Los Angeles in 2006, assures Leesburg residents that the restaurant will provide a dining experience that is simultaneously familiar and entirely one-of-a-kind. He explains that the chain takes inspiration from European street foods, explaining “We took the street food and elevated it. Then we combined the price and speed of fast food with the ambiance of fine dining.”

Spitz allows customers to enjoy a cost-effective meal without sacrificing the full restaurant experience. Rademan tells future regulars what they can expect, saying “The idea is you come in, order at the counter, we bring it out to you on real plates, with real silverware. There’s a full bar selection, frozen cocktails, sangrias, and craft beers. It’s right between fast food and fine dining. We have an LA street artist partner who personally designs the artwork. It’s got its own unique vibe.”

Leesburg residents eager to try Spitz’s fare can anticipate a wide-range of dishes. Rademan recommends the street cart fries for beginners, stating “They’re our version of loaded fries. They’re awesome, a big crowd pleaser. And our version of the gyro is excellent.” Future patrons can look forward to distinctive reinterpretations of established favorites. Rademan says ”Everything is always our version, so people familiar with certain dishes will get a unique version. We have entirely gluten free and vegan menus. We can go as healthy as you want or as all-out as you want. Everything is super flavorful and fresh. All of our meat is halal.”

Leesburg can plan on sampling Spitz’s menu next month. Patel states “We’re shooting for a mid-February opening. We’re in the last stage of construction and starting hiring. We’re doing final design work.”

Rademan adds that local foodies should sign up for the restaurant’s email list to receive updates on the eatery’s debut. He states “We do a really big grand opening celebration typically. We haven’t nailed down the date yet, but there will be a buy one get one free offer. People can go onto the website and sign up to be included in the event,” adding “It’s a great way for people to come and see what we’re about.”
