According to a recent permit filing, El Molino Bakery aims to debut in Everett at 8500 Evergreen Way.

“I have a lot to do currently, and am focusing on the legalities right now. In about a month, I’ll have more information to provide,” Eduardo Avendano, one of the brains behind the operation, told What Now Seattle.

Overall information about El Molino Bakery is currently limited. El Molino’s permit filing was for a spirits, beer, and wine rest permission under El Molino Mexican Food LLC. Washington Company Search states that the LLC was incorporated on January 16th, 2025.

For the property itself, according to Loop Net, the property was built in 1975 and boasts 5,244 square feet of space. It has been marked as no longer being available to lease.

The property listing goes on to say the space was a “Former bank building located near the intersection of Evergreen Way & Casino Rd. The property is surrounded by many national and regional tenants.”

According to Yelp, the bank in question would be a former Bank of America space. Bank of America has been marked as permanently closed.
