Chuy’s at 18008 N US Hwy 281 in San Antonio recently filed a construction permit application, seeking to make improvements that would better accommodate to-go orders.
According to the filing, the project will include “adding a to-go pick-up window and canopy” and modifying the kitchen area to include a “work table on the interior side.” The job will be executed by Lewisville-based design firm Parkway C&A LLP beginning June 19 and cost an estimated $100,000 to complete.
For readers who are unfamiliar with the concept, the Tex-Mex restaurant chain is known for “Texas-size plates that won’t break the bank.”
“Our menu is made up of a combination of flavors, with recipes and ingredients from across New Mexico, Mexican border towns, the Rio Grande Valley, South Texas, and, of course, Austin,” the Chuy’s website shares. Some of the more popular items include “Big As Yo’ Face” burritos, tacos, fajitas, and enchiladas.
Established in 1982 by Mike Young and John Zapp, the first Chuy’s outpost opened on Barton Springs Road in Austin — not more than an abandoned Texas Barbeque joint at the time, the location is still open to this day.
