Best Coffee and Lounge: A New Culinary Venture for Couple

Monse’s Pupuseria, Saigon Cafe, and new Mountain Shadows Restaurant owners expand.

Local restaurateurs are set to unveil Best Coffee & Lounge in downtown Colorado Springs, transforming the former Wild Goose Meeting House at 401 N Tejon St, into a place for caffeine and cocktails. According to Springs Mag, it will be co-owned by Tim and Monse Hines, Humberto Cabrera, and Rudy Ramos

Located at the corner of Tejon and Boulder, the new café follows Colorado Springs Mayor Yemi Mobolade’s business, which operated for nearly 11 years. There will be a fireplace, an outdoor patio with fire pits, and a private event area accommodating up to 15 guests.

It will be open 7 days a week and host live music and events. Caffeine, coffee-infused cocktails, craft cocktails, mocktails, and beer will be on the menu, alongside light bites, baked goods, and dishes from Monse’s Pupuseria.

The Hines are well known in the area for Monse’s Pupuseria, and their recent acquisitions of Saigon Café and Mountain Shadows Restaurant, The Gazette points out. There was no response to requests for comment before publication from the couple.
