A new multi-faceted restaurant is coming to downtown Castle Rock. INTERQUEST LLC, the entity behind a new venture called Wide Awake Eatery, was approved for a liquor license in mid-March at the address 115 Wilcox St., state records show.
This venue is backed by the same ownership team behind Sedalia’s Wide Open Saloon, Leah and Todd Hills. They told What Now Denver that all permitting and licensing have been completed and the business is currently in the process of hiring and training new team members. Job postings show they are looking for part-time front-of-house staff.
It will be a breakfast-and-brunch-focused spot that will also have some kind of evening component. In the A.M., they will serve dishes like Banana Foster French toast, Nashville chicken and waffles, benedicts, and casual lunch favorites. For nighttime, the owners are leaning towards an American grill menu.
“We lived in downtown Castle Rock before moving out to Sedalia for almost 3 years, and what we felt was missing in downtown Castle Rock was a new and modern breakfast concept. We have been working on this concept for the last two years, and we are very excited to launch,” they said.
Wide Awake is set to open at the former location of Tribe at Riverwalk, community posts show. The Hills are remodeling the space for a more indoor-outdoor flow, with a fire pit on the patio and a reconfigured bar area. Dining will include high- and low-top booths, a large communal table, and various seating styles.
