A Cuban Concept is in the Works for NoCo

 A new spot for soulful Caribbean food is beginning its first operational steps, the company has shared. Elvira’s Cuban Cuisine, a concept created by Melissa Lopez Daniels, will be temporarily working out of a take-out only space while she looks for a permanent home for the business.

In a recent post, Daniels introduced herself to the community and asked for locals’ support as she ramps up to a full-service restaurant. For now, it’s offering pickup and delivery on Mondays and Wednesdays from 11 a.m. to 2 p.m. out of Mystic Moon Bakery in Loveland.

Elvira’s, named after her grandmother, offers meals blending Cuban and Puerto Rican culture made from homemade recipes, some of which have been passed down in her family for over 150 years. Options available depend on the day, but some of the best-selling dishes include Ropa Vieja, Arroz con Pollo, a 3-pound Cubano sandwich, and ham croquetas.

Even as she just begins, the business has already been wildly popular and has glowing reviews. It’s suggested to place a pre-order, its website states, as items often sell out.

“I never in a million years thought I would get to where I am today,” she wrote. “This has been a dream of mine for so long… and now there is no doubt in my mind that I will be able to move into restaurant space of my own and finally achieve my childhood dream fully.”
