Downtown Estes Development to Feature BBQ Joint

Wes Moore’s WesTex BBQ food truck will have a permanent space downtown, according to Estes Valley Voice. The concept will be part of the highly anticipated Stanley Chocolate Factory complex that is nearing completion at 157 W Elkhorn Ave.

Not many details are available yet about WesTex BBQ’s tenancy within the building, which was announced at this week’s Town Board meeting. Construction is ongoing at the property, as shown in posts by Timberline Builders. Framing was recently completed.

Moore, a local pitmaster, was inspired to start the venture by his Texas upbringing. He uses a signature low-and-slow smoking method and serves what the brand calls “the best BBQ this side of the Rockies.”

It’s unclear if the sit-down eatery will have an expanded or different menu. The trailer has brisket, pulled pork, and the Carolina sandwiches; sides like beans, coleslaw, and jalapeño bacon mac and cheese; and also offers family-sized options for ribs, brisket, and pulled pork.

Requests for comment from the business were not returned before publication.
