Construction is underway for Humble Bistro at Adeline Luxury Living and Humble Market at High Street

The team behind Humble Bistro is growing again with plans for a new location and a new concept, Humble Market, both set to open in  Phoenix at 222 E. Jefferson Street and 5450 E. High Street Ste. 117, respectively.

Construction is underway for Humble Bistro, with a targeted completion date of September 2025, according to details from a liquor license application. This location will be at the Adeline Luxury Living apartments, near Second Street and Jefferson, across from the Phoenix Suns’ arena. Humble Market, on the other hand, is also under construction at High Street and is expected to be completed in August 2025. The new market will sit across the street from a Humble Bistro and its sister concept. There are no exact opening dates for either of these restaurants.

When these new Humble Bistro locations open, customers can expect globally inspired dishes and a European cafe-style setting. Menu staples include truffle mushroom risotto, Spanish octopus, and wood-fired flatbreads. The restaurants also offer a curated wine list and craft cocktails. Humble Bistro focuses on small plates and seasonal specials. Although details are limited, Humble Market is expected to provide various delicious food and beverages, as the company has applied for both Series 12 (restaurant) and Series 7 (beer and wine bar) liquor licenses.

Humble Bistro opened in 2021 at High Street in northeast Phoenix, followed by a second location in Gilbert in 2022. The brand also includes two related concepts: Humble Pie in Glendale and Humble Oysters & Bubbles at High Street. All restaurants are led by co-owner Eric Cornwell and head chef/ partner Jorge Gomez, who brings a diverse culinary background to the growing Humble brand. Under their leadership, each location aims to deliver consistent quality with a local touch.
