Teocalli Cocina, a growing Colorado-based Mexican restaurant chain, is set to open a new location at 1575 Boulder Street, Unit C, liquor license records show. The eatery will be a welcome addition to the Lower Highlands space, which has seen a decent amount of turnover recently.
The company was approved for a liquor license at the address in mid-May. It will be Teocalli Cocina’s fourth restaurant, joining existing locations in Lafayette, Arvada, and most recently, Longmont; What Now Denver covered the latter when it was prepping for business last spring.
Founded by third-generation restaurateur Grant Hopfenspirger, the eatery is known for its scratch-made regional dishes and gluten-free kitchen. Culinary operations are led by Chef Julio Gaspar, originally from Oaxaca, and Chef John Curiel, a Mexican-born chef with experience at Big Red F restaurant group and TAG Restaurant Group.
The space at 1575 Boulder St. last housed two concepts from Big Red F. First, Lola Coastal Mexican served the neighborhood from 2006 until its closure in 2022, and it was followed by The Post Chicken & Beer. The Denver Post reports that venue closed in December.
