The owners of Boondocks Patio & Grill are preparing to open a new restaurant concept, Pistoleros Parrilla, in Old Town Scottsdale at 4333 N. Civic Center Plaza.
The new wood-fired Mexican steakhouse is the latest from brothers Luke and Jake Kory, who own Boondocks Patio & Grill in Old Town Scottsdale and Tempe, according to the Phoenix Business Journal. Pistoleros Parrilla will be located just down the street from Boondocks Scottsdale, in a former office building that has been reconfigured for restaurant and bar use.
The 5,000-square-foot space will feature a second-story patio for outdoor dining. Customers can expect a menu focused on wood-fired steaks and charcoal-grilled meats, aligning with the Kory brothers’ goal of expanding their presence in the Valley with a concept distinct from Boondocks. Pistoleros Parrilla is expected to open in the fourth quarter of 2025.
In addition to the new steakhouse, the Korys have been actively acquiring property in the area. They’ve purchased a site across the street from their Scottsdale Boondocks, currently home to Portfolio Picture Framing, though no plans for that location have been announced. They have also recently acquired land in midtown Phoenix, near Central and Osborn, where they plan to open a third Boondocks location, pending a rezoning process.
Boondocks Patio & Grill has become a staple in Old Town Scottsdale since its opening, offering a laid-back atmosphere, live music, and a full menu of food and drinks. Its success led to the launch of a second location in Tempe, and both venues have built a loyal following. The Kory brothers’ proven track record in creating popular hospitality concepts puts Pistoleros Parrilla in a strong position once it opens.
