Pizza Shop Coming to Rancho Mission Viejo

A new pizza parlor is gearing up to open its doors in Rancho Mission Viejo: 7 Hills Pizzeria. The business announced its pending arrival in the community in an Instagram post last month. It will be located at 28362 Airoso St.

“Something delicious is baking… and it’s not just the pizza crust. 👀🔥 We’re getting ready to open our doors and serve up the best slices in town. Stay tuned — your new favorite pizzeria is almost here!” the post reads.

Owner Jim Adam told What Now OC that they are currently finalizing construction, with an opening slated for September. The restaurant spans 2,350 square feet and will seat up to 71 guests. Liquor licensing records show the status of the company’s application is still “pending”. Hiring is expected to start in August.

It will offer a menu with neo-Neapolitan pizza and thin, crispy artisan pizza, along with hand-crafted sandwiches, crispy mozzarella sticks, chicken wings, and fresh salads. There will also be an assortment of beer, wine, and hard cider.

Adam is a veteran of the pizza industry with over 30 years of experience. He has trained under prominent figures in the field and is now working alongside renowned pizza consultant Alastair Hannmann — also known as The Pizza Buddha.
