Health inspectors reported significant violations due to food being kept outside the appropriate temperature range. Pupusa fillings were placed on the prep table with no temperature control. In a corrective action, items were taken out in 3 hours and relocated.
Shredded cheese (73°F) and sliced potatoes (75°F) were found on the prep table without temperature control. They were later relocated to the freezer.
Inspectors found an approximately eight-gallon stockpot of cooked red beans improperly cooled. The items were immediately discarded. The report noted that the improperly cooled red beans were unfit for human consumption.
Inspectors observed that an employee picked up a pan that fell on the floor and placed it directly on another clean pan at the cooks line. Both pans were taken for a wash. Inspectors noted the absence of a consumer advisory for undercooked eggs.
An entire case of whole chickens in the freezer was not covered, the report said. Areas like cook’s prep cooler gaskets, exterior and hinges, the wall behind the cook’s prep cooler, the wall beside the ice machine and behind the steam table, the floor under the flat grill/fryer, and the right side space below the flat grill were found unclean with grease, residue, and debris.

Follow-Up Inspection
Pupusa Central received a yellow placard from the health department prompting the reinspection to take place within 24-72 hours of the routine inspection. The restaurant must correct all the major violations to receive a green placard and avoid any further actions.
