Plaza 38 in West Highland is getting ready to welcome one of its newest additions, a Colombian concept called Rinconcito. According to a post from the business, it is one of two new food spots coming to the food hall.

It will be a breakfast, lunch, and late-night pizza venture, Plaza 38 owner Gene Lucero told What Now Denver. Not many other details are available currently, and the company did not respond to requests for comment.

Rinconcito will join another new eatery that has also signed a lease at the property: Chi Bites. That venture will offer Midwest comfort staples, from a family that’s relocating from Illinois.

These upcoming additions are the latest development at Plaza 38, which has undergone many operational changes. According to Colorado Community Media, COVID threw a wrench in its original opening plans and it has been striving for full occupancy since, but now all shells will be filled.

Lucero, who has 40 years of experience in the local real estate and finance industries, owns Plaza 38 with his ex-wife. He said the property is “a tribute to Northwest Denver”. It’s decorated with photos of community landmarks, and has a logo that’s a nod to its location.
