The Sacramento County Health Department conducted a routine inspection of Casa Ramos Mexican Restaurant on September 10 and reported multiple health code violations, including evidence of rodent activity.

Health inspectors noted that the automatic dishwasher had no sanitizer (0ppm chlorine) during a cycle. It was found that the sanitizer line wasn’t working properly because of air gaps. After fixing the issue and priming the machine, sanitizer levels were measured between 50 and 100ppm.
Employees were observed manually washing dishes in a two-compartment sink, using a mix of detergent and sanitizer in the same step. Wastewater containing food debris was seen improperly discharged onto the ground near the drain where the tallow bin is stored.
Health inspectors found signs of rodent activity in several areas of the facility. Approximately 15 droppings were found in a corner of the dry storage room near bulk food containers. Nine droppings were observed on and beneath chemical containers connected to the automatic dishwasher.
Six droppings were found in a back cabinet storing clean plates at the bulk chip station. Two droppings were seen on a shelf storing to-go containers near the register. Seven droppings were discovered inside a container holding extra sauce cups on a shelf across from the automatic dishwasher.
Old grease and old food debris were seen on, below, and behind all cooking equipment under the ventilation hood and in corners throughout the cook’s line. Dust was observed accumulating on the fan mounted on the wall of the cook’s line.
The report also noted slime-like accumulation in the floor drain below the soda machine. Both bulbs for the ceiling light in the back unit of the walk-in refrigerator lack shatter guards. The handwashing sink in the kitchen was seen clogged and not draining at the start of the inspection.
Follow-up Inspection
Casa Ramos Mexican Restaurant received a yellow placard from the Sacramento health department. They will hold a reinspection in the next 24-72 hours. Health officials require that all violations be corrected before a green placard is granted.
