The health inspectors reported an employee eating in the food prep area. A roll of paper towels was seen stored on top of the dispenser in the restroom, and the dispenser was left empty.

Inspectors found sliced Spam sitting in a turned-off oven at 85°F. The food item was reheated to above 165°F during the inspection.

During the inspection, discard time documentation was not maintained for Spam musubis stored at the front service counter, making it a repeat violation. As a corrective action, 8 to 10 pieces of Spam musubi were voluntarily discarded.

A Voluntary Condemnation and Destruction Report was completed, reporting the improper use of Time as a Public Health Control (TPHC) as the reason for destruction. The items were deemed unfit for human consumption according to the California Health and Safety Code.

The hot water temperature at the three-compartment warewashing sink was measured at 105°F, which is below the minimum requirement for proper sanitization. A bucket of coffee grounds and a box of dehydrated boba were seen stored on the kitchen floor.

The health inspectors observed that the upright refrigerator was missing a thermometer, preventing proper monitoring of internal temperatures. Damp wipe cloths were seen stored on the beverage preparation table without adequate chlorine sanitizer; a residual of 0 ppm was measured.

The report noted that a cell phone was observed stored on top of the beverage preparation table.

Follow-up Inspection

Cafe La Vies received a yellow placard from the Sacramento health department for major violations. A reinspection will be done in the next 24 to 72 hours. The restaurant must correct all the noted violations to receive a green placard.
