In New Orleans, Cajun and Creole food get top billing. That means traditional Southern Soul Food has to play third fiddle. At Fat Back’s Food Shack, coming to 2600 Martin Luther King Jr. Blvd., Lindsey Carrere and her family co-owners are looking to change that when the restaurant opens this spring.
“We’ve been hearing from a lot of people around like the city that soul food is just not what it used to be,” Carrere said. “So we’re trying to kind of bring that flavor back.”
Local chef, and Lindsey’s husband, Larry Carrere will be the driving force behind the menu. He’ll be bringing experience gained at Mr. B’s Bistro, GW Fins, and Legacy Kitchen’s Steak and Chop to a classic soul food menu that will include fried chicken, greens, sweet potatoes, and more.
There will be a limited bar menu that includes six daiquiri machines, Lindsey said. In addition to bringing some more bold flavors to Central City, Carrere and her team are looking to beautify the building with their landlord’s blessing.
“We’re going to redo the whole face of the building,” she said. “We’re going to put a mural on it. It’s going to look great.”
