Downtown Phoenix is about to get more than a lounge when Pablo’s opens — it’s going to get an immersive experience. The nightlife destination, led by the husband and wife team of Cary Prewitt and Melissa Levick of Saguaro Nights Entertainment Group, is expected to open early 2026 at 800 N. 1st Avenue.
More than a lounge, Pablo’s encompasses several rooms, a patio, and a hidden speakeasy — all with a distinct storyline, says Saguaro Nights’ co-founder, Cary Prewitt. “The project is designed after a fictional character named Pablo, who was born in Phoenix, moved to Mexico City, owned a distillery in Jalisco, and was known for throwing legendary parties.” Prewitt describes the fictional Pablo as an “enigma”, similar to the “World’s Most Interesting Man” character.
Pablo’s invites you into the fictional character’s home. To recreate the experience, Crater ,the hospitality division of Arkham Projects, a Mexico-based firm known for avant-garde spaces, led the design. “We explored culturally. We wanted to tell stories. What would Pablo’s house include?,” says Prewitt.
Guests will be transformed to Pablo’s playhouse, starting with the courtyard, considered the heartbeat of the space. Beyond the courtyard, there are three main rooms: the living room — an upscale but fun space, the den — a sultry lounge area complete with a sunken sitting area, and the billiards room — a fun, casual rec room that honors Lucha Libre culture. There’s also Night Tiger — a pulse-quickening nightclub built for dancing until the lights come on, and a secret speakeasy that will serve craft mezcals. The goal, says Prewitt, is to have a new adventure each visit.
The cocktail program is designed by Barter & Shake Creative Hospitality and bar veteran Mat Snapp, the award-winning team behind Century Grand, Platform 18 and Undertow.
This ambitious project is the first Phoenix undertaking for Saguaro Nights Entertainment Group, but Prewitt assures there’s more to come. “I think Pablo’s does a good job of signaling the intent that we are here to create awesome projects that will shift the course of Phoenix nightlife into the next 20 years”.
