Fans can soon enjoy Chili Shack in Brighton, as the popular Colorado-based chain works on opening a location in the suburb. According to Westword, the QSR chain has taken ownership of a local eatery at 361 N. Main Street and will rebrand it next month.
In recent social media posts, the company explained that it purchased the 1,500-square-foot building and land that houses La Sierra Hamburgueseria. It’s currently operating that business, but will soon be transitioning it into a Chili Shack. A company spokesperson told What Now Denver it has seating for 30 guests and there will be five initial employees.
Customers can expect a diverse menu, including fully customizable burritos, grilled tacos, quesadillas, enchilada plates, Southwest-inspired burgers, loaded fries, and other street-style favorites. Its signature green chile will be available as well.
This comes on the heels of even larger expansion news from the brand. Chili Shack announced this week that it’s working on the first out-of-state location in Las Vegas, and it will soon open up franchising opportunities in Colorado, Arizona, California, Florida, Nevada, and New Mexico.

Olivas started Chili Shack in 2020. He was inspired by cooking with family at a young age; his father was a professional chef for over 20 years. The first location opened in Lakewood, and it has since grown to Federal Heights, East Colfax, Broadway, and downtown Denver as well.
