Chicago-based breakfast and lunch restaurant Egg Harbor Café is opening a Highlands Ranch location in the near future, at 9579 S. University Blvd. This is the second outpost the company has planned for Colorado, and was recently announced, according to the Denver Post.
The space that Egg Harbor will move into in Highlands Ranch was previously home to HopsnDrops, a brewery that closed this past spring. Much of its brewing equipment has already been removed, so there is not too much work to be done at the site.
This news comes along with the report that the business is also working on a development at 7222 E. Layton Ave. in the Denver Tech Center. What Now Denver covered it last week, and that one is set to open first.
Egg Harbor Café was founded in 1985 by Jack and Paula Wright in Hinsdale, Illinois. They grew it into a family-run business across three generations, spanning Illinois, Wisconsin, and Georgia, with more than 20 units.
