A routine Orange County Health Department inspection documented several violations at Mariscos Los Corales. The inspection report noted a pest infestation at the restaurant, leading to its temporary closure. Other violations include unsanitary conditions and the facility’s need for repair.

Located in Santa Ana, Mariscos Los Corales is a Mexican restaurant is known for its food and the casual atmosphere it creates for customers. A recent inspection documented the following violations:
- Live cockroaches were seen on the wall above the hand-wash sink’s metal panel. They were also present in the hole in the wall next to the hand-wash sink. Inspectors also spotted them on the wheel of the clear 2-door alcohol cooler, on the back kitchen wall, and on the front prep sink wall.
- Dead cockroaches were spotted inside the unused 2-door reach-in cooler under the agua fresca dispenser. They were also on the floor under the hand-wash sink.
- Chlorine sanitizer test strips were not available in the facility at the time of the inspection.
- There were three unused reach-in coolers in the facility.
- Food equipment was stored directly on the floor, instead of the approved six inches above the ground.

- The facility needs vermin proofing as several gaps and holes were found during the inspection. There were gaps between the metal panels next to the front prep sink.
- At the prep sink, there were gaps between the metal panels under it and a hole in the wall above it. There was a hole in the metal rear door and gaps around it.
- Under the hand-wash sink, there were holes around the piping and a hole next to the sink. Behind the alcohol clear 2-door upright cooler, there were gaps between the base cove tiles.
- The front door of the facility was kept open even when not in use.
- Inspectors also found old food debris accumulating in several areas of the facility. It was in between the gaskets of the reach-in cooler under the agua fresca dispenser. It was on the sides of the cooks’ line and the cooks’ line equipment’s metal panels.
- There was trash, old food, and filth accumulating in other areas of the facility. It includes, on the wall next to the dry storage room and prep cooler. It was also on the floors under the cook’s line, all coolers, dry storage shelves, and an ice machine.

Follow-Up Inspection

The restaurant was ordered to halt operations due to a major violation related to pest activity. The management of Mariscos Los Corales needs to ensure the facility is cleared of all signs of infestation. Thorough cleaning and sanitization are also required.
Following this, the restaurant can request a reinspection, which, once passed, will allow operations to resume.
