Saigon Cafe is set to debut at The Groves in Building D in Humble early next year. According to this recently filed state permit, the Vietnamese girl and bakery will open up to the Greater Houston community at 15906 Woodland Hills.
The permit details that construction is expected to have already started and will wrap up by the end of the year. But, in a conversation with Saigon Cafe owner, Bich Bui, What Now Houston learned that construction and permitting are still underway. Bui confirmed that the new eatery should open by the end of January.
“Going to be authentic and high quality,” Bui said.
Offering a variety of homemade Vietnamese dishes, Siagon Cafe promises the taste of tradition and the experience of culture when visiting the new eatery. Serving everything from noodle soups, which Bui shared is her favorite, to Banh Mi, Saigon Cafe has a little something for the Vietnamese foodie in us all. In addition to traditional delicious eats, like spring rolls and vermicelli dishes, Siagon Cafe will also serve freshly-baked bread daily, boba and milk teas, and a variety of other thirst quenchers.
While the restaurant is still developing, the website is up and running, prepping interested customers for a tasty trip through an authentic Vietnamese experience.
“At Saigon Cafe, we’re reimagining fast-casual dining by bringing the essence of Vietnam’s street food culture to Humble, Texas. Every dish is crafted with care, blending authentic recipes, fresh ingredients, and a touch of modern flair,” the website reads.

Saigon Cafe is set to debut at The Groves in Building D in Humble at 15906 Woodland Hills by the end of January 2026.
