A popular healthy concept is making it easy-and delicious-for Memphis foodies to keep their new years resolutions with a fresh location. Wild Beet Salad Co., already a hit in Cordova, will be opening as part of the Stomping Grounds redevelopment of Railgarten, reports Daily Memphian.

The nutritious and delicious concept will operate as both the onsite restaurant for Stomping Grounds-a unique, multipurpose establishment with something for every age-and as an independent entity. Wild Beet’s 2158 Central Avenue location will feature all of the options fans have come to know and love, while allowing owner Kelcie Nollner to expand upon success.

A press release provided to What Now Memphis explains that Wild Beet will launch with its established menu, with evolution on the horizon. Visitors can expect: “All your favorites like Cashew Crunch, Kale Yeah, and Southwestern salads and wraps, Paninis, quesadillas, and fajitas.”

New offerings will include a dedicated kids menu, breakfast options, and the Lil’ Beet Treats Ice Cream Shop.

Wild Beet Salad Co. will prove the ideal companion for Stomping Grounds. The latter strives to be a place where both adults and children can find community and fun. Wild Beet crafts delicious cuisine that will satisfy every generation, all while providing healthy fuel for a good and active time. As the release states: “Stomping Grounds needed a restaurant that was: fresh, fast, kid-approved, parent-approved, local, delicious, and NOT deep-fried. Stomping Grounds goal was to find a restaurant partner to bring food that parents actually want to eat, while also offering kid friendly options. A match made in kale heaven.”

Stomping Grounds is on track to open in summer of 2026, but Memphis foodies eager to sink their teeth into Wild Beet’s delectable fare are in luck. Nollner is hoping to have the restaurant open and serving satisfied customers by mid-January. Wild Beet will offer online ordering and pickup for guests who don’t have the desire or compulsion to stick around but still want to enjoy a nourishing, healthy, and tasty meal.
