New Jersey Mike’s Franchisee Targets the Metro

A store will come to Quebec Square in the spring.

Jersey Mike’s Subs is expanding into Denver’s Central Park neighborhood, according to the sandwich chain’s website. A new location is planned at 7506 East 36th Avenue, Suite 49, within the Quebec Square retail center.

This store is part of a broader Colorado growth strategy led by franchise owner Steven Ashoori, president of Ashoori Group. His family is seasoned multi-unit operators that also manage nearly 200 IHOP and Burger King locations in several states; they were recognized on Franchising’s Mega 99 list the last two years.

“We recently joined Jersey Mike’s, and Denver will be our first store. We expect to have five locations by the end of next year,” Ashoori said. “We chose Denver because of its vibrant neighborhoods, strong sense of community, and appreciation for fresh, high-quality food.“ We’re excited to bring Jersey Mike’s to the area and look forward to becoming a place where local residents, workers, and families can enjoy great subs and feel at home.”

The Denver restaurant is expected to open in spring 2026 and will occupy approximately 1,800 square feet. Planned hours are 10 a.m. to 9 p.m., with an estimated staff of about 22 employees. The plaza it’s joining is a major retail center anchored by Walmart, Sam’s Club, and Home Depot, leasing brochures show.

The location is currently listed as “In Development” on Jersey Mike’s official website, alongside several other planned Colorado locations in Arvada, Brighton, Broomfield, Thornton, and another near Denver International Airport.
