Poulet Rouge, a Quebec-born fast-casual restaurant specializing in customizable grilled chicken bowls, is expanding across the province with several new locations opening soon.

The new locations will include Beauport at 898 Bd Raymond, Beloeil at 481 Rue de l’Industrie, Fleur de Lys at 550 Fleur-de-Lys Street, Joliette at 521 Rue Saint-Charles-Borromée N, Monkland at 5556 Av de Monkland, and Saint-Hubert at 5960 Cousineau Blvd, according to the company’s website. While exact opening dates have not been confirmed, customers can expect Poulet Rouge’s signature customizable bowls, which combine a choice of bases, toppings, sauces, and signature grilled chicken flavors, along with vegetarian, vegan, and halal options.

Poulet Rouge was founded in 2012 in Galeries Joliette by two friends, with a third joining in 2017 to help grow the brand. Since then, the company has focused on providing fresh, high-quality meals that cater to a range of dietary needs, blending Mediterranean flavors with modern fast-casual dining.

The brand has steadily expanded throughout Quebec, earning a reputation for innovation and quality in the fast-casual segment. Poulet Rouge emphasizes customer experience and meal customization, offering both in-restaurant dining and takeout options. The new locations aim to reach more communities while maintaining consistent service and food standards.

Menu offerings include signature grilled chicken bowls with flavors such as BBQ, Hercules, Citron, Glass with Garlic, Volcano, and Spicy, along with customizable bases like brown rice, quinoa, crushed wheat, or romaine lettuce. A wide variety of sauces, including Caesar Ranch, Smoked Chipotle, Dijon Honey, Lime Coriander, Spicy Mayo, and Sweet Za’atar, complement the bowls. Vegetable fillets are available for the same price, allowing flexible meal options.

These openings mark an important step for Poulet Rouge as it brings its modern fusion concept to new neighborhoods across Quebec. The brand has grown thanks to the support of customers, employees, franchisees, and community partners, and each new location is designed to reflect the company’s core values of energy, love, and passion.
