During an inspection on February 6, Maui Rose was found in violation of several health codes by the Orange County health department. The restaurant was recommended to shut down by the department as a result.

According to the report, Maui Rose, which serves Barbeque and teriyaki, was flagged for violations. They were:
- Not all food handlers possess a valid California Food Handler Card. Certified Food Managers are exempt from this requirement.
- The report noted that the person in charge was washing dishes and then handling food without washing their hands with soap as required. The person in charge then washed hands at the three-compartment sink due to cans being stored in the handwash sink basin. Corrective action was taken when the cans were removed, and hands were properly washed at the designated hand sink with soap and warm water.
- Bean sprouts were seen stored in water at room temperature near the back entrance door, measured at 65°F. The person in charge stated the sprouts had been stored there for less than four hours. Bean sprouts were relocated to the walk-in cooler.
- Cabbage was observed stored in vinegar on the floor near the rear entrance door, containing small cockroaches. The food was discarded.
- Live cockroaches in various stages were seen in several critical areas. It included cooler gaskets, floor drains, walls near sinks, chest freezer surfaces, inside pickled cabbage, and near the deep fryer. Pest control documentation was not available for review at the time of inspection.
- A household vacuum sealer was seen kept in the dining room area.
- The facility was flagged for clutter throughout the kitchen and dining room areas. The person in charge was seen preparing food in the rear alley outside the facility.
- A probe thermometer was not available for use during the inspection.
- Although sanitizer buckets were present, multi-use wiping cloths were observed stored outside the sanitizer solution.
- The facility was observed not to be fully enclosed, with front and rear doors allowing potential pest entry.
- One small bucket of pickled cabbage was voluntarily discarded during the inspection due to contamination concerns.

Follow-up Inspection
As per the report, the establishment is expected to correct all the violations before they request for a reinspection from the health department. The restaurant’s permit to operate the food facility was temporarily suspended.
