ShibShib Middle Eastern Cocktail Bar to Shake Up Seattle’s CID

The bar will feature inventive Middle Eastern–inspired cocktails and sharable small plates.

A new Middle Eastern cocktail bar is ready to shake up Seattle’s Chinatown‑International District.

ShibShib, owned by Ahmed Suliman, will open at 510 Maynard Alley.

Suliman began his career in 2010 at Seattle’s Sitka & Spruce, then moved through the industry, honing his skills in food, beverage and service, the StarChefs reported. 

He later launched his own pop-ups across the city before opening Cafe Suliman in Melrose Market in 2023. Now, he’s embarking on another new venture.

The bar will feature inventive cocktails infused with Middle Eastern flavors, from pickled and seasonal fruits and vegetables to Arabic spices, according to The Seattle Times.

To pair with the cocktails, ShibShib will serve sharable small plates, including a twice-baked potato topped with lamb and yogurt.

ShibShib has not announced an official opening date; updates are available on the restaurant’s website.
