Seafood Restaurant in Sacramento Issued Yellow Card Over Health Code Violations

The Sacramento health department conducted a health inspection at Station 16 on February 23. The restaurant was found in violation of several health codes, resulting in it receiving a yellow placard.

Station 16 serves seafood and drinks in Sacramento. According to the report, the restaurant was cited for violations like:

  • No paper towels were available at the cook’s line handwash sink. The sink was fully blocked by a large container. The bar handwash sink was also seen without soap. The issue was corrected.
  • Paper towels were observed stored outside the dispenser at the bar handwash station. The issue was corrected.
  • The dishwasher was not dispensing sanitizer, and the sanitizer concentration measured 0 ppm. The dishwasher had been used without verifying the sanitizer concentration. Employees were instructed to discontinue use until repairs are made. The masher was rewashed and properly sanitized.
  • The report noted that personal drinks were observed stored above prep tables at the prep line and above the salad cold top.
  • Potentially hazardous foods were kept outside proper holding temperatures. Alfredo sauce measured at 49°F, heavy cream measured at 43°F, and cooked chicken wings measured 43°F. All items were corrected.
  • Three containers of cooked pasta noodles were observed on a cart at temperatures from 70°F to 84°F. The employee stated the pasta was cooked about one hour before the inspection.
  • The report mentioned that black slime accumulation was observed inside the ice machine, and pink slime accumulation was seen on soda gun nozzles at the bar.

  • The fan guards in both walk-in refrigerators, including the outside walk-in refrigerator, were found to be unclean.
  • No quaternary ammonium (QA) test strips were available to verify sanitizer concentration.
  • The report said unapproved scoops were observed in bulk containers of rice, Cajun seasoning, sugar, and brown sugar.
  • An unsecured carbon dioxide tank was observed near the syrup system.
  • The tallow bin was observed open, and grease accumulation was present on the ground around the tallow bin and dumpster area.

According to the report, Station 16 was given a yellow placard and is expected to undergo an inspection within 24-72 hours. The restaurant must correct all the violations to receive a green placard.
