Mexican Restaurant in Sacramento Cited for Health Code Violations Following Inspection

Polanco Cantina was cited for improper cold holding and failures in dishwasher sanitization

The Sacramento health department carried out a routine check at Polanco Cantina on February 25. The food establishment received a yellow placard after being flagged for many health code violations.

Polanco Cantina serves authentic Mexican cuisine and drinks in downtown Sacramento. According to the report, the violations were:

  • Cheese stored in a bowl on top of a container on the left cold top measured 62°F and was not in direct contact with refrigeration. The cheese was voluntarily discarded by staff and corrected on-site. Cheese in the right cold top measured 43°F. The ambient temperature of the right reach-in unit measured 47°F, and the cheese stored inside measured 50°F.
  • The left dishwasher at the bar was in active use, but measured 0 ppm chlorine. The operator was instructed to cease using the unit and use only the properly functioning right dishwasher.
  • The high-temperature dishwasher in the kitchen peaked at 150°F. Until it reaches at least 160°F, dishes must be manually washed, rinsed, and sanitized using the three-compartment sink, the report said.

  • The report said that a dark slime buildup was observed on the wall inside the ice machine.
  • Raw pork was stored on the top shelf above plantains in a two-door freezer.
  • An ice scoop was kept with bottles next to the ice container on the left side of the bar.
  • Multiple damp wiping cloths with no sanitizer residual were observed on a prep table adjacent to the cookline, the report noted.

According to the report, a yellow card was issued to Polanco Cantina, and a reinspection will be conducted within 24 to 72 hours. The eatery must correct the violations to secure a green placard during the follow-up.
