M.O. Hospitality Is Bringing a Chef-Driven Restaurant to Downtown San Jose

Downtown San Jose is set to gain a new restaurant, Strāta. The chef-driven concept is to bring a unique dining experience to the city. It will also elevate San Jose’s culinary landscape, creating a lively space for diners.

M.O. Hospitality Group is introducing its fifth California restaurant concept, Strāta. The restaurant will be located in Downtown San Jose and will open on May 13, 2026. It will join other popular spots like Paper Plane, MINIBOSS, and Eos & Nyx.

The name ‘Strāta’ is derived from ‘stratum,’ referring to layers formed over time. This aligns with the restaurant’s concept that focuses on layers of flavors, techniques, and experience. Its menu will rotate seasonally to highlight the seasonal ingredients of California.

“Strāta is about creating something that feels both thoughtful and lively — a restaurant that evolves with intention, not just for the sake of change,” said Dan Phan, owner of M.O. Hospitality. “We’re building layers through cuisine, hospitality, and experience, so every visit offers something new while still feeling deeply familiar, with a consistent level of quality.”

Features That Refine the Dining Experience

Manu Studios is behind Strāta’s design, incorporating warm, earthy tones and layered textures. The restaurant is inspired by geological “strata” or layers of earth formed over time. The restaurant’s design reflects Strāta’s evolving culinary concept.

A deep brown ceiling will give the dining room a cozy, cave-like atmosphere. The clay-colored walls in soft mauve shades add warmth and softness to the interiors. The bar area will stand out with bluish-green scallop tiles, arched woodwork, and a dark stone countertop to add a modern feel.

Development will unfold in two phases. The first phase will introduce the new color palette, lighting, and refreshed interiors. The second phase will add dark wood booth seating, layered ceiling details, a wood-framed entryway, and a live music stage.

What’s on the Menu

Executive Chef Roberto Mendoza will lead the kitchen at Strāta, creating dishes that combine creativity with familiar flavors. The menu at Strāta is designed to evolve, introducing new dishes every six to eight weeks. Instead of focusing on a single cuisine, the restaurant will blend global flavors while keeping California ingredients at the center of every dish.

The menu will focus on layering flavors, textures, and temperatures to make every dish feel dynamic. It will offer two dining experiences under one roof. The dining room will feature a rotating prix-fixe menu, while the bar lounge will serve à la carte dishes and shareable plates.

Some of the featured dishes include Chicken Fried Morrels, Rockfish, and Ricotta-Stuffed Tortellini. The beverage menu at Strāta is also designed with the same attention to creativity and seasonality. Signature cocktails include Bollywood Old Fashioned, Hanami, and Peas & Thank You.

The wine program includes pairings for the prix-fixe menu. There is also a strong non-alcoholic beverage section offering elevated alcohol-free options.

Strāta aims to bring a fresh dining experience to Downtown San Jose with its evolving menu and layered design. Combining chef-driven cuisine with intentional hospitality, the concept is positioned to become a standout dining destination in Downtown San Jose.
