Potbelly Sandwich Shop Eyes Downtown Knoxville For First East Tennessee Location

Chicago-born sandwich chain plans broader regional expansion with four restaurants in development

Chicago-based sandwich concept Potbelly Sandwich Shop is preparing to expand further into East Tennessee, with franchise owners Kenny, Rick, Ronnie, and Nick Patel planning to open four new locations across the region.

The group is currently scouting downtown Knoxville for its first restaurant, Nick Patel told WhatNow Nashville during a recent interview. While an exact address has not yet been finalized, Patel confirmed the franchisees are actively working toward securing a location as they continue building out the broader four-restaurant pipeline, with hopes of beginning openings by the end of the year.

“We’re really trying to find the perfect spot for the first one,” Patel said.

The upcoming expansion follows reporting originally published by Knox News, which indicated the franchise group is targeting restaurants in downtown Knoxville, Maryville, Pigeon Forge, and Sevierville.

Founded in Chicago in 1977, Potbelly Sandwich Shop began as an antique store before evolving into a neighborhood sandwich concept centered around toasted sandwiches and the vintage potbelly stove that inspired the company’s name. Today, the fast-casual chain operates hundreds of locations nationwide and is known for its toasted sandwiches, hand-dipped milkshakes, cookies, soups, and salads, according to the company’s website.

Patel said the decision to pursue the franchise came after experiencing the concept firsthand in Chicago and connecting with both the atmosphere and menu.

“The vibe and the food just stood out to me,” Patel said. “It felt different from other sandwich concepts.”

The menu features signature offerings such as The Wreck and Italian sandwiches alongside shakes and baked cookies, items Patel believes will resonate strongly with East Tennessee customers.
