The upcoming project from Chef Julian Hagood and Jake Santelli will expand Harry’s Good Times Co.’s hospitality footprint

A new hospitality concept blending boutique accommodations and dining is headed to Seattle’s Capitol Hill neighborhood. 

According to a recent Instagram announcement from Harry’s Good Times Co., the team behind Harry’s Fine Foods and Harry’s Beach House is preparing to open The Baillie, a hotel and restaurant concept set within a historic home near Volunteer Park

The project is expected to open in Summer 2027 and will feature 10 guest rooms, a ground-floor restaurant, and gathering spaces designed around what the company describes as “lingering meals, late nights, and a sense of belonging.” 

The project comes from the founders of Harry’s Good Times Co., Chef Julian Hagood and Jake Santelli, a Seattle-based hospitality couple known for building intimate, neighborhood-focused spaces across the city.

Hagood, a Culinary Institute of America graduate, previously trained in Michelin-starred kitchens before launching Harry’s Fine Foods on Capitol Hill in 2016. Since then, the company has expanded with the opening of Harry’s Beach House in West Seattle and the boutique lodging concept Harry’s Guest House, also located in Capitol Hill.

While details about The Baillie’s restaurant menu have not yet been revealed, the company’s existing culinary concepts emphasize Pacific Northwest ingredients and seasonal sourcing. At Harry’s Fine Foods, menus regularly feature regional seafood, local produce, and rotating dishes based on seasonal availability.

The Baillie also appears to follow the same intimate design style seen across the company’s other properties. Images shared online show a historic home with wood interiors, vintage furniture, and softly lit gathering spaces throughout the property.
