Chef Mike Cordero’s Newest Venture Capellini’s Classic Italian Headed to Ashburn

The restaurant will be customer-ready in early fall.

One of the DMV’s busiest and most esteemed chefs is planning to continue his hot streak with a new venture set to debut later this year. Chef Mike Cordero, the mind and apron behind Carbonara and other regional favorites, is bringing an old-school Italian restaurant with a modern flair called Capellini’s Classic Italian to Ashburn, reports local media outlet The Burn.

 

Capellini’s Classic Italian will see the storefront at 22850 Brambleton Plaza trading out tacos for pasta. The 3,500 square foot place last housed Rebel Taco Cantina until its closure in August of last year. The space will allow Capellini’s to seat up to 75 guests indoors and another 80 will be able to dine al fresco in pleasant weather.

 

Capellini’s will emphasize Northern Italian dishes. Chef Cordero was kind enough to fill What Now DC in on what diners can expect from this exciting new dining experience, saying “Capellini’s will bring the same classic Italian soul that guests have come to love at Carbonara, but with a modern twist. The twist will be in the plating, the design, and the overall experience.”

 

Future regulars can look forward to delicious, freshly prepared Italian favorites, filtered through a contemporary lens. Cordero explains: “At its heart, Capellini’s will remain a true scratch kitchen — from our fresh pasta and homemade mozzarella to our baked bread and handcrafted desserts. Every dish will reflect the old-school Italian traditions I grew up with in New York, while presenting them with a fresh, modern approach.”

 

Diners will be able to enjoy their meals in a warm and welcoming atmosphere that channels contemporary Italy in everything, down to the dishes it’s served on. Cordero describes the vision, saying: “The restaurant’s design will feature a modern Italian feel while still embracing the warm, classic atmosphere of old-school New York Italian dining.”

 

Ashburn foodies will be able to grab a bite at Capellini’s before the year is out-Cordero and his team are projecting an autumn opening. The lauded chef is enthusiastic about this new chapter, saying: “We’re excited to bring this new concept to Loudoun County and are looking forward to opening in early Fall 2026.”
