Fat Rosie’s Opening in Vineland Pointe

It’s the restaurant and margarita bar’s second Florida location

Located at 749 N Alafaya Trail in Waterford Lakes, Fat Rosie’s is “Orlando’s Best Taco & Margarita Bar.” The restaurant, which also has seven outposts in Illinois, is preparing to expand to a new location in Orlando.

The new Fat Rosie’s will open at 11506 Regency Village Dr, joining the Vineland Pointe retail center.

There, you’ll be able to enjoy Mexican-style offerings from menus that have included “Kick-Ass Fajitas”; tacos with proteins like ground beef, chicken, al pastor, and shrimp; and House Specialties like Cochinita Pibil (Achiote and citrus marinated braised pork shoulder wrapped and slow-cooked in banana leaves, served with black beans, queso fresco, pickled red onions, cilantro, habanero salsa, and warm corn tortillas) and Tampequeña (Grilled skirt steak served with one enchilada roja, grilled queso fresco, rajas, Mexican rice, beans, cilantro, guacamole, and warm corn tortillas).

“On a trip to Mexico, our Chicago-born founder met an agave farmer working the fields with his donkey,” says the Fat Rosie’s website’s Our Story page. “Chef was captivated after learning that this hard-working animal had been by the man’s side for over 20 years. The donkey was not only part of his livelihood, but of his family too. The chat soon led to a cantina. And after a few, Chef told the man he would someday open a restaurant dedicated to, and named after, his four-legged friend. It would be stubborn on authenticity and feature a kick-ass approach to ModMex™ food and fiesta. Welcome to Fat Rosie’s.”

What Now reached out to representatives of Agave & Stone Hospitality on Tuesday to ask about plans for the opening. A representative was not immediately available for comment.
